Beef short ribs recipe

Beef short ribs - perfect when you need something robust after a busy day outside. The enticing aroma of these country cooking style ribs will spill through your house and draw you to the kitchen.

Short ribs are a meaty but economical cut, and if you have a whole or side of a cow, you will likely have some some in your freezer. Here's an easy way to cook them.

Ingredients

  • 3 lbs short ribs (preferably organic grass fed)
  • Sea salt
  • Freshly ground black pepper
  • Dried herbs (marjoram, oregano, rosemary, savory, thyme, and/or sage)
  • Your favorite cooking oil
  • 2 cups chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 3 tbsp minced garlic
  • 1 1/2 cups broth (beef or chicken)
  • 2 or 3 bay leaves

Preheat the oven to 350 degrees.

Trim any excess fat off the ribs. Sear them in a deep frying pan on medium/high heat until they are browned all over. Set them aside.

Brown the ribs

Chop your onions, celery, carrots, and garlic and saute them in the pan you used for the short ribs. Cook over medium heat, stirring until they are starting to brown.

Put the ribs and the vegetables in a casserole dish and add the stock and bay leaves.

Bake covered for approximately 1 1/2 to 2 hours or until the meat is pulling away from the bones. Meanwhile, prepare mashed potatoes and a vegetable or salad to round out the meal.
