Ingredients:
Prepare your carrots by washing, peeling, and cutting them into even sized sticks.
Heat up a cast iron skillet or frying pan (large enough to saute your carrots in a single layer) and add your stock, butter, olive oil, and maple syrup. Once the butter melts, add the carrots.

Simmer the carrots over a medium heat - covered - until they are tender and most of the liquid has been absorbed.
Then cook uncovered for a few minutes, stirring as required until the carrots just start to brown and caramelize on the outer edges.

Season with freshly ground pepper and top with freshly grated Parmesan cheese.
