Dag's Sweet and Pungent Meatballs

Hope you enjoy this tasty ground beef recipe as much as we do!

An easy but very tasty recipe for meatballs that's perfect for gatherings at the lodge or cabin... a real crowd pleaser!

Ingredients

  • 2 lbs. ground beef
  • 1/2 large or 1 small onion minced finely
  • 3 cloves garlic, minced
  • sea salt and freshly ground pepper to taste
  • 1/4 cup Olive oil (or as much as needed to fry the meat)
  • 1 egg beaten
  • 2 Tbsp. flour
  • 1 cup of chicken stock
  • 3 green peppers
  • 1/2 fresh pineapple peeled, cored, and sliced into small wedges
  • 1/2 cup vinegar
  • 1/8 to 1/4 cup sugar
  • 1 Tbsp. soy sauce

Mix meat, onions, garlic, salt, and pepper in a large bowl and form into round balls. These can be made ahead of time and refrigerated or frozen.

Prepare batter by mixing egg and 2 tbsp. flour, then dip the balls in the batter and fry them in olive oil on med-high heat. The batter is optional - a matter of personal preference. We've made them with and without the batter and both are good.

And of course, as shown in the picture below we always find it is helpful for the chef to have a good glass of wine on the go.

When the meat is cooked through, set it aside.

Chop up three fresh (preferably organic) green peppers and peel, core, and chop the fresh pineapple into small wedges.

Mix the stock, vinegar, and soy sauce together and then combine the peppers, pineapple, and all remaining ingredients in a frying pan and cook (covered) on medium heat for 10 minutes or until the peppers are cooked.

Add the meat, mix together, and serve! It goes well with rice or just on its own!
